Nutritional Aspects Macronutrients: Spelt (20) contains mainly carbohydrate (70g/100g) mostly in the form of starches with some dietary fibre (10g/100g) - similar to other whole grains. It contains similar fat and protein content to other whole grains at 2g/100g and 15g/100g, respectively, in dried grain. Micronutrients: Key micronutrients found in significant levels in spelt include manganese, phosphorous, and magnesium, with smaller amounts of thaimin (B1), niacin (B3), copper, iron and zinc. Spelt is NOT gluten free.
