Nutritional Aspects In terms of macronutrients, couscous is mainly carbohydrates in the form of starch, with only 5g/ 100g of dietary fibre and 11g/100g protein. Couscous contains a variety of vitamins and minerals in very small quantities with only manganese appearing in a significant amount. Note: Cous cous is made from wheat and contains gluten so may not be suitable for those sensitive to gluten.

Common Uses Often served as a side dish with meat, chicken, seafood or vegetables. Couscous is also great in salads and stuffing and can be served hot or cold, flavoured or plain. Try cooking with stock rather than water for added flavour. Place 1 cup of couscous into a heatproof bowl, add 2 tsp virgin olive oil and 3/4 cup hot vegetable stock (or water). Cover and leave for 4 mins. Fluff up couscous grains with a fork, season and serve
