Nutritional Aspects Desiccated coconut is unsweetened, very finely ground coconut with most of the moisture removed. The main difference between desiccated, shredded and flaked coconut is the shape of the coconut. On a macronutrient level, dried coconut contains mostly fat (64.5g/100g) in the form of saturated fat and carbohydrate in the form of dietary fibre (16.3g fibre/100g) with some protein 7g/100g. Dried coconut contains very little on a micronutrient level with only manganese, copper and selenium appearing in significant amounts.
