Nutritional Aspects Chickpea flour is made by grinding up raw chickpeas into a flour, thus it has similar properties to chickpeas, but a reduced fibre content. Macronutrients: Chickpea flour (20) contains mainly carbohydrate (53.2g/100g) mostly in the form of starch but contributing more sugars than whole chickpeas. Dietary fibre content is 10g/100g compared to 17g/100g in whole chickpeas. Fat and protein contents are relatively unaffected at 6g/ 100g and 21g/100g respectively.
