Nutritional Aspects Macronutrients: Brown rice has a lower starch (carbohydrate) content than other rices (75g/100g) and while its protein (only 7g/100g) is similar to white rices, it contains more natural fatty acids (~2.4g/100g). The fibre content of brown rice is reduced through the processing into flour. Micronutrients: Where brown rice really exceeds white rice varieties is in its micronutrient content, containing much higher amounts of folate, thiamin, niacin, biotin, manganese, magnesium, zinc, phosphorous, even some iron and fluoride. The content of some of these may be reduced slightly through the processing into flour. Note - the milling down into flour will slightly change the nutrient profile of brown rice (reducing the fibre and increasing the starch/sugar content)
