Nutritional Aspects Barley is a gluten-containing grain whose main contribution to the diet is starch (60.5g/100g, less than most rices) and protein (8g/100g), with almost no simple sugars. Barley also contributes about 12g/100g dietary fibre, assisting with digestive and cardiovascular health. These factors combined, make barley a slow-digesting carbohydrate, adding the the satiety effect of a meal. Barley also contains appreciable amounts of potassium (nerve and muscle function), phosphorous (bone health, cell wall structure) and vitamin B3 (niacin) (energy, DNA synthesis). Barley contains gluten, therefore is not suitable for those with intolerances to gluten.
