Nutritional Aspects Amaranth is not a true grain, but classified as a pseudo-cereal as it's not part of the Poaceae botanical family (rather than the grass family). However it is listed with other grains as its nutritional profile and uses are similar to true cereal grains. Amaranth does not contain gluten so is suitable for Coeliacs and those with a sensitivity to gluten. Starch and Dietary Fibre: Similar to cereal grains, starch (carbohydrate) is the main nutritional component of amaranth as well as dietary fibre. Protein and Healthy Fats: However, compared to other grains, amaranth contains more protein and fats. Minerals: Compared to the cereal family, amaranth contains significant iron, magnesium, phosphorus, potassium and appreciable amounts of calcium.
Common Uses Use the same way as you would puffed rice/corn/buckwheat etc.; in cereals/mueslis, snacks and baking, even salads.
