Nutritional Aspects Activating nuts and seeds involves soaking the nuts and seeds overnight in a water/salt solution before draining, rinsing and dehydrating them. Reports are that the soaking process partially breaks down some of the ‰Û÷anti-nutrients‰۪ in the foods (like phytates, oxalates and cellulose) which can inhibit the absorption of other nutrients into the body. Therefore making the nuts and seeds more easily digestible and their nutrients more absorbable. However there have been no randomised controlled trials confirming or disproving this. This grain-free muesli is free from gluten, thus suitable for those with gluten intolerances. The use of buckwheat, quinoa and activated nuts and seeds makes this a particularly nutrient-dense mixture. The pseudo grains, nuts and seeds contain very high levels of vitamins and minerals like calcium, copper, manganese, magnesium, potassium, phosphorous and zinc. While the berries and cacao nibs are loaded with antioxidants, B-vitamins and Vitamins C, E and K. On a macronutrient level Grain Free Muesli is like other mueslis in that it is predominantly carbohydrates at 49g/100g but only 7g/100g sugar with the remaining carbohydrate found in slowdigesting starch and dietary fibre. Additionally, Grain Free Muesli contains 12.5g/100g protein and 18g/100g healthy fats which improve satiation and regulate blood sugar in the hours after eating.
