Nutritional Aspects Cacao nibs are simply chocolate in its purest form; dried and fermented bits of cacao beans. They contain about 14g/100g protein, 36g/100g carbohydrate (much of which is dietary fibre) and 43 g/100g fat (mostly saturated fat).
The unprocessed state of Cacao nibs means that they also retain the antioxidants present in cacao including some B-vitamins as well as Magnesium, Iron and some calcium.
