Nutritional Aspects Vinegar has also been used for centuries for medicinal purposes. The primary acid found in Apple Cider Vinegar is acetic acid, however it also contains butyric acid (butyrate). Cells that line the intestinal tract use butyrate as a fuel, thus it is thought that Apple Cider Vinegar can be a good for gut health and digestion, however, there is a lack of evidence for this effect at this stage.
However, evidence does indicate that vinegar ingestion reduces the glucose response to a carbohydrate load in healthy adults and in individuals with diabetes. There is also some evidence that vinegar ingestion increases short-term satiety. Additional therapeutic properties include antioxidant activity, antibacterial activity and blood pressure reduction.
