Nutritional Aspects Activation is like sprouting of grains (wheat or barley grass) or sprouting of seeds (mung bean sprouts or alfalfa sprouts). It converts some of the starch to simpler sugars, converts some of the protein and undigestible fibre as the emerging seed is breaking these down for fuel for its new growth. Roasting slightly shifts the fat composition of the almond, saturating some of the mono- and poly-unsaturated fats. Healthy Fats: Almonds are a great source of healthy fats with 55g/100g. 69% of the almonds fat content is monounsaturated fatty acids, followed by 25% Polyunsaturated fatty acids (all omega-6) with the balance being saturated fatty acids. Protein: Almonds also contain a significant amount of protein at 19.5g/100g, meaning they assist muscle, enzyme and hormone function while increasing the satiation effect of foods.  Minerals: Almonds also contain a variety of essential minerals including magnesium, phosphorous, potassium, calcium and to a lesser extent Zinc .  Vitamins: Thanks to the high levels of fats contained in almonds, they are an exceptional source of the fat-soluble Vitamin E, providing 28mg in every 100g almonds (recommended adequate intake is 7mg for women and 10mg for men).
